Cherry Pie Energy Balls

So, in a continued effort to bring us some balance, I am serving up another utterly delicious and healthy snack for us to munch on. Imma be honest with you, these might not be the prettiest things in the world (most of the energy bites/balls I see aren’t though), but what it lacks in looks, it more than makes up for in taste and simplicity.

I love to make a double batch of these and keep them in the fridge so I always have something ready when I need a snack or pick me up.

Vegan, gluten-free cherry pie energy balls

These cherry pie energy bites have only have five ingredients, and one of them is optional (but totally recommended). And it takes all of maybe 10 minutes from start to finish. Seriously, I don’t think it could get any easier. Soooooo…. there is no excuse for you to not go out and make these right now (unless of course you’ve already made them and are snacking on them right now, in which case I don’t know why you are still reading this unless you just love to read through all my ramblings. In which case, I love you.)

You see this picture up here ^^^. I was trying to come up with different ways to take photos of these cherry pie energy bites and thought, “Oh hey, I bet they would look cute stacked.” I didn’t even think about how I was going to do it, but I was sure I saw other bloggers do something similar and figured it couldn’t be too hard. Weeeeeeeeeeell, they’re ball-shaped and don’t want to stack no matter what you do. So I took a strand of uncooked spaghetti and kabobed the bites together and took two little pieces and stuck them in the back of the bottom bite to prop the whole thing up.

I know, I know #foodbloggerproblems

But, it’s cute, right? Even if you think it’s stupid, tell me it’s cute anyway. I went through a lot to get those little suckers to stack.

Simple and delicious vegan, gluten-free cherry pie energy balls

Ingredients
  • 15 dates
  • 1 cup dried unsweetened cherries
  • ½ cup pecan halves
  • ¼ cup unsweetened shredded coconut
  • ½ teaspoon vanilla extract (optional)
Instructions
  1. Place all the ingredients together in a food processor and blend for about 1 minute, or until everything is pulverized and sticks together like a dough.
  2. Use a tablespoon to measure out the mixture and roll into balls.
Notes
For best results, plump the dates by soaking them in hot water for a minute before draining and adding to the food processor.
Keep in an airtight container up to 5 days. I prefer them kept in the fridge, but they can be left at room temperature.
